Here are a few of my favs:

Mrs. Robinson - Lemonheads (Simon and Garfunkel)
    Superstar - Sonic Youth (Carpenters)
    Luka - Lemonheads (Suzanne Vega)
Age of Consent - Neverending White Lights (New Order)
Lovers in a Dangerous Time - Barenaked Ladies (Bruce Cockburn)
I Fought the Law - Clash (Eddie Cochrane)

I am sure I will come up with a few more.
I got a fever. And the only prescription is more golf equipment.

    Here's a few "different" ones:

Sudbury Saturday Night - Kim Mitchell (Stompin' Tom cover)
Stairway to Heaven - Frank Zappa (Led Zeppelin cover)
Who do You Love? - George Thorogood (Hank Williams cover)
Fragile - Jesse Cook & Holly Cole (Sting cover)
Whiskey in the Jar - Metallica (traditional)
Mary had a Little Lamb - Stevie Ray Vaughn (traditional)

I actually think the greatest cover of all time is SRV's version of Little Wing.

'Whiskey in the Jar" by Thin Lizzy - A rock cover of a traditional folk song. It was so good that Thin Lizzy's cover version has since been covered by U2, Pulp (1995), Smokie, Metallica (1998, their version won a Grammy), Belle & Sebastian, and Gary Moore (2006).

A great one is of course Johnny Cash doing Reznor's Hurt. Supposedly Reznor won't play it live anymore because he believes Cash's version was better than anything he could do with it.
    http://youtube.com/watch?v=SmVAWKfJ4Go

A fun one is Gin & Juice (orig. Snoop Dogg) as performed by the gourds
    http://youtube.com/watch?v=CrpdgD2SLRQ

A bit of a stretch as it's barely a cover and more of a sampling, but 'He Got Game' by Public Enemy is one of the best (Cover of Buffalo Springfield's 'For What it's Worth') ...

edit (posted too many times already, better just add to this )
    ------------------------------------------------------------

A fantastic CANADIAN cover is Tweeter and the Monkey Man as performed by The Headstones...originally the Travelling Wilburys. IMO the headstones were one of the best bands to see live...too bad they aren't together anymore.

should ahve added, also a huge fan of Marilyn Manson's cover of Golden Years.

Some really good ones mentioned so far, but my fav has been missed.

Saturday Night's Alright For Fighting (No, not the terrible Nickelback cover, the INCREDIBLE cover by The Who...the song fits them so much better than Elton)

It's amazing in searching the web, how many different sites there are that post lists of the best cover songs of all time. They differ greatly, but one song that comes up fairly regularly is 'Respect' by Aretha Franklin (take that Beyonce...).
My favorite list of any of the sites is from the New York Post, which lists their Top 100 Cover songs of all time and is has a bit more of an eclectic flavor than some of the others. Sadly my earlier pick of 'Whisky in the Jar' is not on the list . Hower I do like No. 76 and I bet it brings back a lot of memories for others of my age:

    76. "Blinded by the Light," Manfred Mann's Earth Band (Bruce Springsteen)
A total classic, while the original wasn't. Plus the mystery of the whole "wrapped up like a douche" thing.

And what did the New York Post pick as No. 1? Get ready for this... I could not believe it myself...:

    1. "Stairway to Heaven," Dolly Parton (Led Zeppelin)
Queen of country rescues song from amateur guitar players everywhere with a soulful rendition that'll have you in tears.

You can check out the whole list below:

LOL, good call, this is such a good rendition of the song you rarely hear Springsteen's played on radio.
