2, 3 or 4-piece balls ?
Which one is best suited for high handicappers with low to moderate swing speed (95-110mph) with decent straight drive ?
Trying to gain a bit of distance with the ball

That's actually a normal to high swingspeed for a recreational golfer.
As to what ball is best suited to your swing you will need to try them out. Depending on how you launch the ball (low/high angle, low/high spin) different balls will work better for you. There are plenty of good 2-piece balls out there now that offer a good mix of price, distance, and spin.
You'll generally pay more for a 3/4-piece ball. Mostly due to better spin on short shots.Not fat anymore. Need to get better at golf now!
