If you didn't see them already, check my posting with pictures of my setup which has the stance and simulator platforms on hinges. I had the same requirement as you for parking the car in the garage, and once I decided on the Pro 7 with its deep platform requirement, I had a lot of planning to do. I thought about something on hoists to raise to the ceiling originally, but the hinge idea has worked out great. Here's a repeat link with an overview of my project:

The best part is that it takes about 90 seconds to let the platforms down, and maybe 2 minutes to put things back up. I think your time allowances are pretty high...if it takes you 15-30 minutes to set up each time you want to use your simulator, I'd worry it would be a big deterrant that would hold you back from using it as much as you want/need to in order to improve your game to the point you want. Really, though, I don't think there are many structures that would take that long to set up. It is somewhat device-dependent of course.
