Do you plan to use the laptop for other task, for example gaming? I don't own an Optishot, but I do own a P3proswing and the requirements seem similar. I have a couple of friends that have the Optishot and they don't run top of the line equipment, although both use an HD projector.
With that said, it seems a laptop with a mid level CPU, I5 or even an I3 or mid level AMD offering and a video card, Geforce 640 or higher or a HD 7750 or higher, will work fine. As I recall, one of my friends even uses a laptop with an integrated video Intel 5000, I think, and it works without much delay.
Make sure it has the inputs, USB for example, and outputs, video for example. you need.

I ran it with an old ASUS zenbook UX31 (second generation i7 with built-in graphic). Optishot runs smoothly on this laptop using hdmi out to a projector/TV.

I'm running a cheap Toshiba laptop picked up on sale from Fry's about a year ago. If you go this route, you should add some RAM, which is minimally expensive. One of the positives of Optishot is it's minimal requirements for a computer.
