Easiest championship courses in the area
What are your top five easiest championship courses in the area?
I'm looking to tune up my game with a few more rounds this year, but don't want to play courses that are super difficult.

Copperdale
Greensmere Premier (more so the front 9)
Mountain Creek
Pineview

How does one define "championship?"
Because I have my own definition, and I don't think a course like Cloverdale or Mountain Creek qualfies....
I would start with the Hunt Club, personally.

I think traditionally "Championship" just meant that at a club with more than one track, that was the one the club Championship was played. So I guess you might think it was the more challenging one they had. Other than that, I don't think there was ever a definition for a "Championship" course.
That said, Anderson is pretty straightforward. The front nine at FalconRidge is pretty open (the back has a few goofy holes, but not particularly tough). I haven't played it but Irish Hills is supposed to be pretty easy.

"easy" would be different for a good golfer and a bad golfer. That's why courses have a rating and slope assigned to them. For example, Stonebridge is supposedly one of easier courses for a scratch golfer (low rating), but is pretty damn hard for a 20 handicap (high slope).
That said, for an average golfer, say 12 handicap, I'd vote for Mountain Creek, Greensmere Primiere, Cloverdale, Meadows and Andreson, in no particular order.

Decades ago a championship course was simply one whose length was 6000 yards or more.
Perhaps an improved definition would be a course sufficiently challenging that could hold a major tournament hosted by Golf Quebec, the RCGA or a professional Tour. The Hunt, as mentioned is obviously one, the Royal Ottawa, Rideau View, Eagle Creek, Rivermead, Camelot and you run out of these kind of courses very quickly.
